Instructions
1: Dice red and green bell peppers, celery, jalapeños, and white onion. 2: Cut up chicken sausage and cube chicken thighs, mixing with Cajun seasoning. 3: In a stainless steel pan, cook the sausage until charred, then remove from heat. 4: Add chicken to the same pan and cook fully through before removing. 5: Add vegetables to the pan and sauté until fully soft. 6: Stir in crushed tomatoes, chicken stock, and additional Cajun seasoning. 7: Turn heat up and add white rice and bay leaf, then allow to simmer. 8: Once moisture is absorbed and rice is done, stir in chicken and sausage to warm everything. 9: Serve immediately.View original recipe
