Instructions
1: Season chicken thighs with salt and black pepper. 2: In a pan, heat unsalted butter and sear the chicken until cooked through. 3: Remove chicken and add sliced mushrooms, minced shallots, and minced garlic to the pan. 4: Cook until mushrooms are browned. 5: Stir in Dijon mustard and Worcestershire sauce. 6: Add Cognac or brandy and cook briefly to evaporate the alcohol. 7: Pour in chicken stock and heavy cream, stirring to combine. 8: Add thyme leaves, lemon juice, and sherry vinegar. 9: Return chicken to the pan and coat it with the sauce. 10: Garnish with finely chopped parsley before serving.View original recipe
