Instructions
1. Cook seasoned chicken thighs in pot until golden brown, then remove. 2. Add shallot, garlic, celery, and crushed red pepper flakes (if using). Sauté until shallots are translucent. 3. Add tomato paste and cook for an additional minute, stirring well. 4. Pour in white wine to deglaze the pot, scrapping up any browned bits. 5. Add chicken or vegetable stock, thyme. Bring to a simmer. 6. Remove thyme sprigs. 7. Add gnocchi and simmer until cooked and tender. 8. Cut the heat and stir in heavy cream and add back in chicken thighs. 9. Stir in spinach until wilted. 10. Serve warm, enjoying the creamy richness and aromatic balance.
