What you need

shallot

bunch fresh thyme

oz butter

tsp white pepper

bunch fresh chives

clove garlic

bunch fresh rosemary

tsp salt

russet potato

oz cheese

cup chicken broth
Instructions
1: Peel the russet potatoes and slice them thinly using a mandoline. 2: Soak the sliced potatoes in water while preparing other ingredients. 3: Finely dice garlic and shallot, then sauté until translucent. 4: Add chicken stock, heavy cream, rosemary, thyme, white pepper, and a touch of salt to the sautéed mixture and let it simmer for about 10 minutes. 5: Remove the herbs from the mixture and add in your cheese of choice. 6: Pat the potatoes dry and incorporate them into the creamy mixture. 7: Stack the potatoes and line them in a baking sheet, adding extra cream about three-quarters of the way up. 8: Top with butter, cover with tinfoil, and bake in the oven at 350°F for about 50 minutes. 9: Remove the foil and optionally top with more cheese before baking again for about 15 more minutes.View original recipe
