Instructions
1: Start by proofing your yeast in 80 g of water between 100 and 110 degrees Fahrenheit. 2: Dissolve your sea salt in the remaining 454 g of room temperature water. 3: Mix in 82 g (10%) of your flour and stir until a slurry is formed. 4: Toss in your yeast mixture and the remaining flour, stirring well until a sticky mixture is formed. 5: Using a mixer or your hands, knead everything together for 10-15 minutes until a ball of dough forms. 6: Oil an airtight container and the top of your dough ball, then cover tightly and place it in the fridge for 24-72 hours. 7: When ready to use, remove the ball from the container and let it sit on a floured surface for an hour. 8: Form your 6 dough balls, cover them with a towel for 2 more hours to let them relax and slightly rise. 9: Top with your favorite toppings and fire in a pizza oven.View original recipe
