Instructions
1: Season the beef chuck liberally with salt and pepper. 2: Chop carrots, celery, onion, and garlic. 3: Sear the meat in an oven-safe pan on all sides, then remove it. 4: Sauté the chopped vegetables until caramelized. 5: Deglaze the pan with a beef bouillon cube and a quart of beef stock. 6: Add onion powder, oregano, basil, smoked paprika, and garlic powder; mix well. 7: Reintroduce the beef, cover with tin foil, and bake in the oven at 350°F. 8: Cook until the meat hits an internal temperature of 125-150°F (about 1 hour). 9: Remove the meat and strain out the au jus; let everything cool down for a few hours. 10: Slice the meat thinly and chop the giardiniera. 11: Heat the au jus, add the sliced meat, and assemble the sandwich on toasted bread with giardiniera.View original recipe
