shallot

tbsp unsalted butter

tsp ground nutmeg

cup pecorino romano

cup dry white wine

tbsp all purpose flour
tsp fresh ground black pepper

tbsp fresh chives

cup gouda

cup cheddar cheese
Instructions
1: Sauté the shallot in butter for a few minutes. 2: Add white wine and cook down. 3: Stir in flour and cook until incorporated. 4: Add room temperature cream and mix until a thick roux forms. 5: Gradually add the cheese by the handful to melt. 6: Season with nutmeg and pepper. 7: Finish in the broiler and top with chives.View original recipe
