1: Cut the potatoes into wedge shape. 2: Put the potato wedges in a mason jar with lemon juice, cold water, lemon peel, Thai chili pepper, bay leaf, peppercorn, and garlic clove. 3: Soak for 24 hours. 4: Remove from liquid and pat dry. 5: Fry in oil at 325°F for 5 minutes. 6: Remove from oil and let cool down. 7: Fry again at 375°F for 2-3 more minutes.
