A recipe for pickled French fries soaked in a salt brine for added flavor. Using organic potatoes and frying them twice provides a delicious texture.

1: Place the salt in a large bowl and add the water. Stir together until the salt completely dissolves. 2: Scrub the potatoes and slice them into wedges, leaving the skin on. 3: Add the fries to the water and place the cabbage leaves on top, then top with a plate to weigh them down so all the fries are submerged in the salt brine. 4: Cover the bowl with a lid and store in a cool dark place for 3-5 days. 5: When you're ready to cook, discard the cabbage leaves and drain the fries, patting them dry with paper towels. 6: Fry the potatoes first at 325°F for about 5 minutes, then at 400°F for another 3 minutes.
